Spices and seasonings we use include cumin, coriander, turmeric, black pepper, mustard seeds, fennel seeds, cinnamon, cardamom, and cloves. Sometimes we leave the spices whole, sometimes we roast them, and at other times we grind and mix them into a paste. Each technique draws out different flavours from the same spice.
